FISH - Flash baked with macadamias

This is my very fave way to cook fish and inspired by the wonderful Annabel Langbein.  I prefer a firm fleshed fish but it definitely doesn't have to be expensive.  I rarely pay more than $20/kg and get a nice reef fish caught locally.  However Orange Roughy and John Dory is fabulous if you've had a bonus payout!

I won't give any measurements in the recipe - just do a John Wayne on this one ......

Grease your favourite oven dish

Melt some butter in a microwave jug and then toast some chopped macadamia pieces in the butter in the microwave.  It only takes a few seconds.

Place your pieces of skinned and boned fish into the oven dish, squirt with lemon juice and sprinkle with a little salt & pepper.  I like to incorporate some garlic at this point, also. Spread with a lavish amount of buttered macadamias.

(As an extra you might like to place some dill or fennel over the fillets, even a little tarragon.  Be careful - the flavours might be a bit oppressive.)

Now, cover tightly with tinfoil and bake briefly in a moderate oven until just done ...... perhaps around 6 to 10 minutes depending on the amount you're cooking.

If you're like me you enjoy your fish underdone which, actually, is properly done.
